Preheat oven to 350 F (175 Celsius). Line two baking sheets with parchment paper or a silicon sheet. Mix almond meal, baking soda, and salt in a bowl. Melt the oil and add it to the bowl.

In a separate bowl whisk the eggs and add the maple syrup and vanilla. Add this mixture to the first bowl and mix well. Incorporate the chocolate chips and then drop large tablespoons of the mixture onto baking sheets, about 1 inch apart.

Flatten slightly to one inch thickness. Bake until set and golden, about 15-18 minutes. Enjoy! 

Almond Chocolate Chip Cookies (gluten free)


- 3 cups almond meal or flour

- 1 tsp baking soda

- 1/2 tsp unrefined salt

- 1/4 cup melted butter or coconut oil

- 1/4 cup Maple syrup

- 2 eggs

- 1 tsp vanilla extract

- 1 cup chocolate chips
